After seeing everything Johnny Earle has created you can't help but want to have a passion. His idea for limited edition shirts is amazing. It's like Starbucks only having pumpkin spice 3 months of the year. You don't get sick of it, you know that it's special.
When I think about my future business I always talk about seasonal foods. How we will have limited edition cupcakes, breads, rolls and pastries. I wouldn't want to ship in avocados all year, so when they are in season we'd have Guacamole on our menu. Amazing fresh made to order guacamole. No one wants the same things all the time, we don't always order the exact same item on a menu.
I day dream about a work space to call my own. I have a kitchen that always smells of some baked good. My son is allergic to many basic baking items, I make special allergen free foods for my son. He has a wider range of foods because of my ability to be creative. A lot like Johnny Cupcakes, limited edition items make you feel special, I like making my son feel special. I made him a completely allergen free chicken pot pie.
Larry Pot Pie
Preheat oven to 375 degrees
Filling;
left over oven roasted chicken
3 left over potatoes, diced
1/2 lb left over carrots sliced
5 small oven roasted onions diced
3 stocks of roasted celery, sliced
Put all items in list above in cooking dish, I used a 9X9 pan.
In a saucepan combine;
2 cups coconut milk
3 tablespoons white rice flour
salt and pepper to taste.
Heat milk in pan, whisk in flour and cook until thickened, whisking occasionally. This takes about 7 to 10 minutes. You should be able to run your finger through the mixture on the spoon and the space isn't instantly filled up.
Add thickened milk and flour mixture to the veggies.
Topping;
Rice Flour Pancake mix
1 1/4 cup coconut milk
1/2 teaspoon salt
Put topping on the pie, cook in preheated oven for 25-30 minutes or until topping is golden browned and crisp. Let cool 10 minutes. Enjoy
This recipe is a personal favorite of my 5 year old who often requests food that, "Normal" children eat. Ranging from American Chop Suey, blueberry pie and fish sticks.

ReplyDeleteAs always I love your post. I admire your skills in the kitchen as well as giving Larry the opportunity to enjoy life without having to substitute a kids loves and desires. As a kid I loved food, still do, and it is so cool to see Larry enjoying himself in the kitchen and in life. I am so happy for him! As for your shop, this is a unique experience and I am sure it can stand out to all. I can see clever marketing along with your clever and unique blend of life this will be an adventure that will reward yourself, Larry and many others for years to come.

ReplyDeleteNice, up-close-and-personal post. I'm going to try that recipe for my kids (they're picky eaters, and any new food idea is always welcome). I think the thing I enjoy and appreciate the most about your blog is the lack of pretense. I really feel as though you're allowing your readers to be a part of your life, to an extent, which is something very few writers are able to accomplish. You have a great looking family, and seem to be a really grounded individual--keep walking deep!
