So tonight I felt like making something different for larry.
He's allergic to Cow's milk, wheat, soy, eggs and nuts.
I created a recipe off my head.
1.5 cups rice milk
1 cup diaya shredded mexican cheese
1/4 teaspoon salt
pinch of pepper
Corn shell shaped pasta
1 can of sweet peas
1 tablespoon Soy-free, Earth's Best butter.
Preheat oven to 350
Follow directions on the box of Pasta.
In a small sauce pan, bring rice milk, "butter" salt and pepper to a simmer. Take off stove and add cheese, stir until the sauce leaves an empty streak if you run your finger over it.
drain pasta.
Mix pasta and peas in with "cheese: sauce.
Pour into baking pan, the bigger the pan the thinner the layer of mac and cheese, I used a pyrex 5X8 or about that size.
Baked for 20-40 minutes
Let cool 10-15 minutes to thicken the "cheesy" goodness
I toasted some ener-G light brown rice flour bread and put some Earth's best soy-free butter on it for his side.
If you try this let me know how I could fix it. you can use any food you want, but we have severe allergies and had to figure out something he can take to school for lunch.
