Johnny Cupcakes

After seeing everything Johnny Earle has created you can't help but want to have a passion. His idea for limited edition shirts is amazing. It's like Starbucks only having pumpkin spice 3 months of the year. You don't get sick of it, you know that it's special. 

When I think about my future business I always talk about seasonal foods. How we will have limited edition cupcakes, breads, rolls and pastries. I wouldn't want to ship in avocados all year, so when they are in season we'd have Guacamole on our menu. Amazing fresh made to order guacamole. No one wants the same things all the time, we don't always order the exact same item on a menu. 

I day dream about a work space to call my own. I have a kitchen that always smells of some baked good. My son is allergic to many basic baking items, I make special allergen free foods for my son. He has a wider range of foods because of my ability to be creative. A lot like Johnny Cupcakes, limited edition items  make you feel special, I like making my son feel special. I made him a completely allergen free chicken pot pie. 

Larry Pot Pie

Preheat oven to 375 degrees 

Filling;

left over oven roasted chicken

3 left over potatoes, diced

1/2 lb left over carrots sliced

5 small oven roasted onions diced

3 stocks of roasted celery, sliced

Put all items in list above in cooking dish, I used a 9X9 pan. 

In a saucepan combine;

2 cups coconut milk 

3 tablespoons white rice flour 

salt and pepper to taste. 

Heat milk in pan, whisk in flour and cook until thickened, whisking occasionally. This takes about 7 to 10 minutes. You should be able to run your finger through the mixture on the spoon and the space isn't instantly filled up. 

Add thickened milk and flour mixture to the veggies. 

Topping;

Rice Flour Pancake mix 

1 1/4 cup coconut milk 

1/2 teaspoon salt

Put topping on the pie, cook in preheated oven for 25-30 minutes or until topping is golden browned and crisp. Let cool 10 minutes. Enjoy

This recipe is a personal favorite of my 5 year old who often requests food that, "Normal" children eat. Ranging from American Chop Suey, blueberry pie and fish sticks.

Ear Drum Conundrum

After a fun filled Friday night and Saturday, I woke up Sunday in a haze. I was so tired I skipped church, and napped after I finished my homework. After dinner at my boyfriend's house, I was laying on a heating pad. Came home from john's while laying on the couch i heard a snap... 


My ear was leaking slightly pink liquid... Then red. John made me go to the ER. Fast wait, always an adventure at Milford Regional Medical Center. The ear would not stop leaking. The doctor came in looked in my ear, "Serious infection and a ruptured ear drum." Awesome.... Just when I needed to miss work the least.


After sleeping most of Monday,  I couldn't even stand up. My balance was off, my eyes weren't focusing. I was nauseated from the medication. Tuesday I was able to do homework and sleep a little bit. Today I finished half my assignments for the week, and I am still a little dizzy. 


I know what you're thinking, and no I can't hear out of that ear, everything is magnified in the other side. Headache! Still can't function at normal level. 


I have a ton to do tomorrow for Thanksgiving, cooking, traveling and socializing. 


I'm going back to sleep. 

Assignment 1 for MKTG

This post is so we know what this blog is for. I plan on letting the world know what I love, hate and hope to change. Yes, about myself and the world, I'm not biased. This is to hopefully shed some light on what we can do to change our bad habits, to promote our good ones and how to train your children without physically beating them. Cheap dates and road trips.

Why cancer patients do it better, and how we manage to do nothing all at the same time. Why college is hard, but with good friends and a good attitude everything is possible.

MY crazy ideas about my business, my crafts and my relationship with a great guy I call my Bear.

Life and college are never easy, but they can be humorous. Make some tea, and enjoy. Ask questions, rant about my rants. Laugh about my embarrassing moments and unfortunate adventures that have gone array.

I will be on here often, and more so cheap date weekends will be documented the best way I know how, from my point of view and pictures.

Plans.

I'm not nearly half way done with college, I'm going for Entertainment Business. What, WHY?! Well, for the past few years I've had this insane pipe-dream about owning a record store with Allergen-Free baked goods. There is a method to my madness. I want the record store to have a stage where band can do acoustic sets, where we can trade, buy and sell records. The allergen-free bakery because my son is allergic to the main ingredients in most processed, pre-packaged items. Why not have a place where vegans and allergy filled children can go without worrying about what they are eating.

I have plans to give the leftover baked goods to local food pantries and homeless shelters. I was on the train this past weekend. Squeezing in on the Green Line and there was a homeless man with a suitcase. Thought nothing of it, didn't care really, wasn't bugging anyone, seemed nice enough. The parade of people that followed were snarling, gagging and plan avoiding this man. I got PISSED, I remembered I had bought a pack of M&Ms the night before and didn't eat them. I gave him my pathetic bag of candy, told him I was sorry it wasn't more. He took my hand, the people gasped as I allowed this to happen not pulling away, he told me, "You're very kind, have a great holiday. I'm actually looking for a homeless shelter and possibly a job, if you had any legal advice it would be great." I said to him, "The best thing to do is keep your head up, and have faith." I hopped off the train and he got off as well. I wanted to help him more, and I got teary eyed in my rage of thoughts about how he was treated. The Dunkin Donuts was closed and Starbucks was too. I just wanted to get him something hot. I didn't get his name, not that it really matters. I am passionate about helping people, loving people.

Anyway, College has been great, I'm proud of myself for the hard work and how it has paid off in most classes. I'm not easily waived from my plans of the future. I want the best in life and I plan on doing what I have to, to reach my goals.
