First attempt at Baked vegan Mac and Cheese

So tonight I felt like making something different for larry.

He's allergic to Cow's milk, wheat, soy, eggs and nuts.

I created a recipe off my head.

1.5 cups rice milk
1 cup diaya shredded mexican cheese
1/4 teaspoon salt
pinch of pepper
Corn shell shaped pasta
1 can of sweet peas
1 tablespoon Soy-free, Earth's Best butter.

Preheat oven to 350

Follow directions on the box of Pasta.

In a small sauce pan, bring rice milk, "butter" salt and pepper to a simmer. Take off stove and add cheese, stir until the sauce leaves an empty streak if you run your finger over it.

drain pasta.

Mix pasta and peas in with "cheese: sauce.

Pour into baking pan, the bigger the pan the thinner the layer of mac and cheese, I used a pyrex 5X8 or about that size.

Baked for 20-40 minutes

Let cool 10-15 minutes to thicken the "cheesy" goodness

I toasted some ener-G light brown rice flour bread and put some Earth's best soy-free butter on it for his side.

If you try this let me know how I could fix it. you can use any food you want, but we have severe allergies and had to figure out something he can take to school for lunch.

First weekend of the Summer!

This weekend we went on a couple of adventures, Saturday and Sunday were just about nonstop.

Saturday John left the house early to get a sticker for his car. We went to his house so he could shower, and we brought some bags of old jackets to the blessing barn. We stopped by the new Price Chopper in Hopkinton where we met Charlie a huge cow that we had to guess the weight. We had Starbucks and heading to the Tougas Family Farm in Northboro. We got to the farm around noon.

We went to pick berries, strawberries and blueberries. For three dollars a person, there wasn't anything to complain about. You see that berries are 3.49 a pound and you get a hay ride, the ride in there was a very annoying bunch of people who felt the need to sit practically on our laps. The littlest girl, who was about 4, was complaining constantly threatened to throw up and was just the perfect amount of noisy to make you realize how hot it was out and how long the ride was. There was a guy at the end of the short ride up to the picking area, he greets you with his hands free microphone that has choppy sound. Berries in season, where to pick, what you grab, where to pay.

Picking berries with an almost 7 year old gets comical at times, Larry wanted to pick every blue-ish berry on the plants. Not just the large blue ones, every blue tinted one. After having to sort through the boy's berries, we filled up a quart. Overheated and sweaty we decided it was time to head back. had our berries weighed and we still had about $6 to spend, that's 2 lbs basically.You keep your receipt and you will have you admission applied to the final total of  fruit sales. When you're in the 90 degree sun for a couple of hours you forget simple things. You get hot, and tired. We picked under 3 pounds of berries so it only cost us the $9 for the admission. We let Larry man the camera (most of the time) he loved being in charge of something.  Instead of wasting the money, we headed to the strawberries. Picking for about a half hour more we were definitely ready to go, and by we I mean John and myself.


The blueberries are in their first week of picking. Strawberries and cherries were in their last week. This made it much easier to convince Larry that blueberries are the far superior berry. The strawberries were few and far between, they were small and over ripened or huge and starting to rot.  We went back to the beginning via the hay ride, there's no hay involved, it's a tractor ride; a bumpy, noisy tractor ride. I'm not sure if people are just stupid or if they just don't care about the other people around them, the woman who sat next to Larry was on her phone, nearly sat on him, and then gave us the dirtiest look.

We fed the animals, we took the long way home. Stopped at Whole foods, bought some food for dinner, to save some money. Had a great dinner, a storm rolled in, and after the storm, there were two rainbows!!!!

On Sunday we decided to be a little more laid back, we woke up, made flapjacks with the featured hand picked berries and were ready to get out of the house by 8:45. We dubbed them very berry kodiak cakes, and for larry I made a cornbread berry cake (vegan friendly). Larry ate half his cake in a sitting, that's a sure fire way to tell it was good.  We went to our favorite Starbucks, all the way out in Medway. Got our normal drinks, by the way if you want something tasty from Starbucks that isn't coffee, get Black tea lemonade with raspberry; you won't be disappointed.

Then we headed out to Grafton for the Flea Market. A weekly Flea that usually is just a bunch of people selling stuff to make ends meat. You can tell when it's the last weekend of the month because there are an abundance of people who won't have enough money for rent and are selling EVERYTHING! I saw everything from bathing suits to live bunnies to porn.  A few people had some nice stuff, we just weren't in a buying mood.

We went to for chipotle's for lunch, stopped at bath and body worth and went to Bj's. Enjoying the lovely weather we went back to John's house,  Larry allegedly wanted to swim, and by swim I mean over react to the water and revert back to when he was 3 and was deathly afraid of it. After fighting Larry for about an hour, he was attacked (not stung) by a bee, so he was swiftly removed from the pool and got sent inside. We had enough fun for the day and headed home, dropped Larry off with his grandparents and John and i headed to Meme's to help with a few things.

On the way home from Meme's John and I stopped at Dairy Queen for some chilly treats. We ended up getting more than just treats we also received free Paw Sox tickets for tonight, but that may not happen with all this stormy weather.














For the first weekend of the summer I think it went really well, we are leaving the 1st of July for 2 weeks in Provincetown, John will be visiting us there on and off for the two weeks. I'm not exactly thrilled for 2 weeks of just Larry and myself, but if nothing else he'll be tired at the end of the days, know how to read and be really good at math.

Travels and end of School

Larry's last day of school is today, which means we have over 2 months to travel, explore and make the best of the situation!

We leave for Cape Cod on July 1st! We decided instead of the just myself telling things from my side, Larry will pick what we do, he'll get the camera and he'll dictate what he wants written on here.

John and I actually spent this past weekend in Pittsburg PA, for my cousin's wedding. I think John may make a guest post because frankly he was super excited about the vacation and we did some neat things.

Let us know what you love to do in New England, we may just make a trip there! Please remember if it has to do with Food we may have to alter it slightly due to Larry's allergies.
